1 cup finely diced celery (3-4 stalks)
1/4 cup finely diced sweet red or yellow onion
2 hard boiled eggs, diced
1/4 cup pickle relish
2-3 Tbsp soy free Vegennaise
1 tsp prepared mustard (Dijon, yellow, or spicy brown)
