Chicken Salad

During the past few weeks I've made a chicken salad using the large cans of white chicken meat we had in the cupboard.  I've found it pretty tasty - with 1-2 cups of Romaine lettuce, as a sandwich filling, or on crackers.

INGREDIENTS
1 can (12.5 oz) white meat chicken meat, broken up
3 stalks celery, chopped
3 scallions, sliced
1/4 cup pecans, chopped
1/2 cup craisins
1/2 medium apple, peeled and chopped
1-3 tsp lime juice
1/4-1/3 cup soy-free Vegenaise
Salt & pepper to taste

COOKING INSTRUCTIONS
Mix all the ingredients together and serve.
